Personally I don't need yet another appliance on my counter.

Regular water could be used I guess but when I clean my distiller I pretty much pour what looks like a bunch of liquid copper down the drain, and we know that Hulda blames copper for a lot of ills.

I use distilled then mineralize it with Concentrace and/or Salt.
