What coconut oil to buy and what to do with it!

Bruce Fife and Mary Eades started this site and support this company's old fashioned way to make the oil. When you take the lid off the glass jar (there is no plastic except the big 25lb things) you can smell the fragrance of the coconut oil. And you can taste it when you cook with it or put it on stuff.
Spectrum is an example of organic coconut oil that is made from
desicated coconut (ie..all the good stuff has been squeezed out!) I used to buy Spectrum and couldn't figure out what all these other people were talking about! LOL
The good ones are made from fresh coconut meat and I buy the expensive one that is not expellar pressed.
2. What I do with the coconut oil:
a. I don't eat bread, but if I did, I would spread it on for sure
b. I make the ground flax seed and coconut oil treats that are on the recipe page and freeze them. I often eat that in the evening for my snack. They are delicious and I get my organic flax in.
c. I scramble my eggs in it, saute onions etc I use it for my cooking oil, except when I want to brown something. Then I use olive oil or raw butter.
c. Melt it slightly and use immediately for salad dressing...works except on very cold days it congeals too fast and crusts all over the spinach leaves! lol
d. Awesome in fruit salad.
Coconut oil boosts the immune system and in some metabolic types it helps you lose weight and in others it doesn't. It converts immediately to energy vs other fats that convert to fat, so it's a great oil for a pick me up. It is safe to cook with at high heat as it does not convert to transfats, etc.
