I have read that glutamine helps to heal the gut. It's plentiful in meat and plant sources and also the body can produce it's own, although apparently it's useful to have more if the body is stressed.
For candida, I'm not sure if the beneficial effects of glutamine in meat outweigh the downsides of consuming it, I suspect not, especially since it seems hard to be low on glutamine unless you're on a really bad diet. This plus the "red meat" advice makes me wonder about the quality of advice you're getting. Generally if you're going to consume meat at all, toxin-free fish is considered best, then poultry, and red meat last of all. I remember reading a research report saying that in terms of cancer-causation, fish is anti-cancer, poultry is broadly neutral and red meat is somewhat carcinogenic.
I know I find it pretty challenging avoiding all meat... but I know it's worth it now I feel the results. I'm glad you're doing good on a high-protein diet, but maybe you'd be healthier still on a vegetarian diet? Who knows... The main reason I think it helps me is because I believe it helps stop putrefecation and bad bacteria forming in my bowel (bad bacteria which I suspect support candida).
