These recipes rock. I tried the Eggplant Pizza last night, which was DELISH!! It was very easy to prepare too. I started it as soon as I got home from work, and was able to have about 12 little pizzas for dinner that same night - it takes about 2 hours to soften up the veggies in the dehydrator. I folded them up like little tacos.

I've been printing out her recipes all day. Thanks!
