To be honest, it's the first time I have heard of Natrium Glutaman - can you please explain to me where this is and how can I avoid it ?

I don't understand how anti-candida diet would make the yeasts mutate into fungal form. By starving it of carbs and Sugar ? Also, what about grains ? Like bread, you know, sandwiches I suppose cut them out as well since they are basically made of yeasts right ?
