Composition of Honey


 I was just doing resarch on Raw and pure sidr honey nd honey composition. I was mazed to see these elements in honey composition. 

 
Honey is a supersaturated solution of carbohydrates which include monosaccharides fructose and glucose in higher amounts and disaccharides maltose and sucrose in lesser amount.
Water is also found in reasonable pecentage .The lesser the water content, the more viscous is the honey and has a alonger shelf life.
 
Honey is enriched with minerals like calcium, copper, Iron, magnesium, sodium, manganese,phosphorus, potassium , chromium, zinc and selenium.
 
Vitamins in honey include B vitamins in trace amounts e.g Thiamine(B1) , Riboflavin(B2), Niacin(B3), Pantothenic acid(B5), Pyridoxine(B6), Folate(B9) and  Ascorbic acid(vit C).
 
Honey contains a number of enzymes namely invertase, amylase, glucose oxidase, acid phosphorylase, catalase and diastase.
 
Honey is rich in antioxidants including pinocembrin, pinobanksin, and chrysin to name a few.Selenium, catalase and vitamin C found in honey also ast as antioxidants.Antioxidants of honey have anti -aging properties.
 
Honey  has relative acidic  pH(3.2-4.5). This relative acidic nature of honey prevents growth of many bacteria.
