I am a diabetic and have been eating Basmati brown rice for many years. I cook it slightly differently from your instructions.
I use 1 cup rice to 2 cups of water. I wash the basmati brown rice in cold water for say 5 minutes. Meanwhile I put the 2 cups of water on the stove to boil. When it is comes to a rolling boil I pour it into the pan containing the drained rice and put this pot on to boil.
I bring this uncovered pot to a rolling boil. When it reaches this point I turn down the heat to a simmer and cover the pot. I check the rice after 30 minutes to see if is dry or if there is water left in the bottom of the pan. If it is dry then it is ready to eat otherwise let it simmer another 10 minutes or until dry. Sometimes I add two to three tablespoons of extra virgin olive oil for flavor.
My blood sugar used to be around 200. With very little medication but with strict diet control I brought it down to 90/100. It took me two years. My voyage is described in my blog titled “My challenge”, link below. I am off all diabetes medication for years and my blood sugar remains the same.
