Answer: I buy raw milk and use kefir grain to make my own condensed kefir (similar ot cottage cheese. I buy organic oats. I don't know the Brix reading.
Clarify: Is this wholewheat bread made by you and is the wheat ground by you and was the wheat of Top Quality or just run of the mill?
Answer: I buy organic whole wheat seed and walnut (not orgnaic), and soak the seeds and walnut overnight then use food processer to grind them up, then dehydrate the mix to make the bread. I don't have the refractmeter at the moment to measure the Brix reading.
Clarify: And are you also caught up in calling the last meal of the day before bedtime as Dinner, when it really is supposed to be Supper?
And how much time from eating this last meal of the day til your bedtime?
Answer: I ususally have supper at 6:00-6:30PM, and go to bed at 9:30PM.

Answer: As you may be begining to see, that unless we may know what the orginal Quality of the Plants or seeds were that were used to make our foods, we may not come to understand "WHY" "WE" are having health problems?
In trying to be a Vegetarian, this may Cause some more problems?
"WHY" do I suggest this idea?
Many Vegetarians , let alone anyone else, do not understand just how Poor Quality the plants and seeds have gotten to be !
The next problem for a Vegetarian may be in where do they get their B vitamins from?
If a person is trying to be a Vegetarian and is living mostly on Salads and bread products, this may prevent them from getting the needed Vit B as well as they may have a problem with Gluten from all the wheat products?
And when the wheat is Poor Quality on top of all this, it just adds to the problems !
And I am here to tell you that it is "Very" Hard to find "ANY" Top Quality Wheat grown "ANYWHERE" !!!!!!!!!!!!!!!
Most wheat grown is of very Poor Quality, altho last year I was able to find some Top Quality Hard spring wheat from a grower out west who sold all his crop as Seed, but I was able to buy some !
His wheat had a Yield of 154 Bushels per acre, where many farmers may not make 60 bushels per acre !
And the Hard wheat was Plump kernels , not sriveled like most wheat kernels are !
So, most of the wheat used in baking is of such Poor Quality and Lacking in the needed Alkaline Minerals, that this may add to the Gluten problems of those eating much Bread products !
For your B vits you may be able to get some of them by learning to eat a Great Variety of Dried Beans and Peas of all Different Varieties ?

And the many Different Dried Beans may provide a Better chance of getting needed missing Alkaline Minerals and Complexed Proteins needed by the body?
But, it only takes very few beans and or peas to help out ! And they are expecially good with added spices and onions etc !
