Regarding Kefir I suggest you do a search for REAL kefir grains or go to the link below for advice on getting real grains. Also if you have candida you'll find a double fermentation makes kefir more tollerable. All you do is ferment it as Lapis says then strain and place in a sealed jar for a further 24 hours. This second fermentation makes a fizzier kefir but it also eats up virtually all the lactose making it much easier to digest.
