My water kefir and kombucha main brews are on my kitchen counter in half gallon glass mason jars all the time. The second brews stay in another room in a cabinet. I know many like it cold, but I prefer both of these a room temp. I've read the ideal temps for fermentation are between 65-75 degrees F. My house is ALWAYS between that! ;)

Can't say I've noticed 'wow, that kefir is really working!' but that's pretty normal for me. I just KNOW it's good for me and so I drink it! Plus I do enjoy making it AND drinking it!
