Nutritional value of chard:

This food is very low in Saturated Fat and Cholesterol. It is also a good source of Thiamin, Folate, Phosphorus and Zinc, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Potassium, Copper and Manganese.

The Japanese do not consume a large amount of calcium and magnesium (somewhere around 500mg a day I hear as opposed to the huge 1500 mg a day we are told to take in the form of calcium carbonate, calcium citrate and whatever new form they are coming up with now.) and yet they do NOT have bone fractures in their later years as Americans do - the calcium and magnesium they consume comes from the large amounts of vegetables they eat and the proportion of calcium to magnesium is therefore correct. The traditional Japanese diet as we all know, consists of large amounts of vegetables and small amounts of protein and also rice. I would have to conclude that all those vegetables are having some effect. I know Japanese people and they absolutely love their vegetables. I do too. But we all know how Americans hate vegetables for some reason. We prefer corn dogs, pizza and twinkies right? oh well twinkies have that creamy center - that might have some calcium huh? ...and then we take handsfull of pills to try and make up for it. gag...
