Re: Cilantro - how to incorpotate in protocol?
I like cilantro, and this is how I make sure I get a lot of it fresh.
Every week I buy cilantro fresh to make sure I have it around. I make a soup with chicken broth, garlic, black pepper, any vegetables I have around(not too many). Just before serving I chop an onion, and cut the cilantro with my kitchen scissors and put them in raw. If you like a Mexican flavor you can season with cumin and red pepper. Or use curry powder. You can try adding a little lemon or lime juice before serving if you like.
I make a salsa with cilantro and onion to use as a topping on other foods. You can put it in mayonnaise to top meats, or add tomato to use it as a regular salsa or dip. Season with salt and lemon juice, or nothing - it is fine as it is.
I also eat it raw, on the side, with something I cook by itself, like millet or buckwheat. It is also good in any barley dish, cooked just a little.
