Hi Ya'll,

As usual many people do not understand this subject !

So, there is need for Clarification !

Top Quality High Brix foods will "ONLY" dry up and "Dehydrate" and "Keep", when kept out of the presents of excess water or moisture !

Whereas, Poor Quality Low Brix foods will Decay and Rot, even in the absents of excess envitonmental moisture !

But, the High Quality High Brix foods will Break down into Organic Matter, when enough excess environmental moisture is made present !

Whereas the Poor quality foods of Low Brix may Decay and "NOT" turn into Organic Matter, as the High Brix foods may do!

As usual not every thing may be as it may first seem to be !
