In my opinion, the legit reason for cutting out cheese is because it's not a bad idea to assume that if you have Candida overgrowth you also have Leaky Gut. And if that's the case, dairy and wheat (gluten) are primary suspects for gut irritation.

If you are in this for the long haul, I would recommend going on an Elimination Diet to figure out whether you have food sensitivities and which foods might be the culprits. Your primary objective should be getting your intestinal environment back to where it should be, which is good for probiotics and bad for candida and other nasty critters.

I did an Elimination Diet for about 5 weeks and had no dairy or wheat. Since then, I have not noticed a difference when I eat these things but I still keep them to a minimum, because they are known irritants, and I also take digestive enzymes that are specific to those items any time I cheat a little and eat them.

Also, as stannard said, brown rice is good for you. Don't cut out all rice because of some silly anti-candida diet that forbids it.
