Sounds good, I wish you the best of luck. One thing I though of was that as you're organic I'd check out what you're allowed to feed them to be allowed to call them organicly farmed. I'm assuming you're in the U.S.A. so i don't know who regulates this over there but in the U.K. arable & livestock farmers have to meet certain conditions (not using X for Y years, etc) to be able to describe their produce as organically farmed. I doubt if cs is specifically excluded but I don't know the rules so you'd be better off checking it out.
