When I make my 'infused' ginga or cayene oil. I pour some oil, I used coconut or sunflower -in a dark bottle, then I thinly slice the ginger (as much as my fist can hold), then I get a small pot of water to a rolling boil, take it off the burner and put the bottle to sit in it to 'warm' the oil.
I let it sit for a week or two in the cupboard. so there is usally a rotation there.
