Hi! My sister has Celiac disease- but the tests were very hard to determine at first. You have to have a very uncomfortable level of gluten in your body before the tests will show you have Celiac. That means, before the test, you have to gorge up on all Gluten foods and breads for a few days- and end up on your bed writhing in pain or else the tests will not be able to detect anything. What a Stupid test!


The nurses my sister had also told her she must not have Celiac, because only "skinny people" tend to have it- not overweight people". My sister was about 25 lb.s overweight- not obese., so she was very insulted at the idiot nurse. Doing more research on Celiac- and joining a Celiac group, she found out that you can also have over-weight problems and have Celiac. It can cause Hypo-thyroidism as well as Hyper-Thyroidism.

Doctors still have to learn more about Celiac since it's only recently come out in the open in the Western World. Italy and other European countries have known of it for years and get their children tested for it at an early age.

Aside from having Celiac., wheat products are not really the ideal food for the human body in the first place. Yeast is terrible for most people also. You're better off having sprouted grains-- at a minimum, and focus more on beans, nuts, wild rice ( celiacs can eat rice- as long as it wasnt manufactured in a plant that also makes wheat products) fruits , veggies, etc.
