Congratulations on giving up processed foods, etc.! That's excellent!
Don't overwhelm yourself with all of the changes that you need to make all at once. Make 1 or 2 changes at a time, start with the easy stuff.
The first thing that I would recommend is to try to get more fresh fruits/vegs. into your diet. Fruit's easy! Apples are in season right now...an apple a day!
Fresh vegetables? once again, start easy. Find a salad dressing that you like...Two that I recommend are Annie's Shitake & Sesame Viniagrette and Annie's Goddess. Make your salads with dark leafy greens, a good one to start with is Romaine Lettuce, flavorful, crispy & juicy. Add whatever strikes your fancy...a good way to make salads more appealing is to make them very colorful...carrots, red cabbage, red bell peppers are all colorful additions. Add some toasted almonds or sunflower seeds for crunch...
Just by adding fresh fruits and vegetables to your diet, you will start feeling better!
While you are enjoying your salads and fresh fruits, time to start doing some research. Visit your local health food store to familiarize yourself with available products. Do some online recipe searches.
Don't get too caught up in trying to "replace" the foods that you have loved. "Healthy" substitutes can be incredibly processed. I think that it is better to eat a small piece of cheese rather than some soy substitute. The same thing with meat. Better to eat a small portion of organic meat rather than some "TVP" (textured vegetable protein...huh?). Basically, what you eat should be in it's natural,whole form.
A couple of things that you could learn to cook right off the bat would be rice(brown, basmati, jasmine...NOT "minute" rice...). A lot of folks use a rice cooker...do a curezone search, I remember seeing a thread on this not too long ago..Get a vegetable steamer. Rice & steamed veggies(leave a little crunch) is a very healthy meal...:)
