Excellent info! We save & toast all of our pumpkin & winter squash seeds. The soaking serves 2 purposes, makes it easier to remove any plant matter(esp. important when removing seeds from uncooked squash, like that halloween pumpkin) and you can also add different spices & flavorings to the soak water, like Tamari, chili powder, cumin, whatever strikes your fancy!
