You were all farming the right way back then. Your uncle's cows were probably healthy. And your soil apparently had good micro-organisms in it.
I think the problems come from all the "new" ways. Using manure from these sick dairy lot cows, growing things on terrible soil with chemical fertilizers and pesticides, impure irrigation water with additives, etc. not to mention processing so..... a lot of ways that people can screw that up.

Fresh from a healthy garden? Not a problem.
