Organic definitions

My 71 year old father asked me a question tonight that I could not answer. I am about to start on some research for him (and me) but thought that my friends on curezone would be my best source for info...

What is the difference between "organically grown" and "certified organic"?

What other definitions of organic are there and what do they mean to the consumer?

which organics are best?

I know that buying local, in season, fruits and vegetables is the best, but other than that I have not investigated this information near well enough... off to the studies!

I will happily read any links and info you can provide; thanks for any and all help everyone!
