It is always better to eat raw or cooked. When you cook something you kill it's lifeforce and enzymes. It is no longer alive and you will need to take away your own energy to digest it. Soaking is simply for easier digestion, which ofcourse has many benefits, but it's not essential. You can dry raw seeds in the dehydrater, but not the oven. You can also dry them out in the sun.
