I think the reason simple fruits are used to first break the fast is because they are easily digested. The sweetness will bring the body out of ketosis and supply ample energy to reactivate the digestive system. The fiber in the fruit will keep the sugars from being absorbed too rapidly and creating an insulin imbalance. You could probably add veggies the second day if you think your system can handle the bulk and the slower digestion of the more complex carbohydrates.
