Here's a basic recipe. I'd like to find one that doesn't need to be cooked and doesn't use flour or eggs. I think there's a way to make them out of coconut and honey, but I haven't tried it yet. Hopefully someone has a better recipe out there. Macaroons - because they're cookies - wouldn't be able to hold a lot of CO so the recipe forum might be a more appropriate place to ask.

8 ounces coconut
10 ounces xylitol
5 egg whites

Preheat oven to 350 degrees.
Mix coconut, Sugar and egg whites together in a saucepan.
Heat gently, til the mixture is warm but NOT hot.
Remove from heat and leave until cold.
Drop by spoonfuls onto buttered baking sheets
Makes about 18
Bake 20 minutes until pale golden brown.
