Peppermint can stimulate bile flow, the pep. tea and the miso soup is all very watery, the miso has the beneficial bacteria which can influence your bowels, then you had MORE liquid in the lunch soup, as well as more coconut oil (although not quite the same, through the coconut milk). Was the Thai soup spicy? That can also kick the intestines into gear. Eating a watery oily diet of things that influence the liver and intestines, I would expect nothing less than a quick movement of watery feces (aka diarrhea). There's nothing to give your wastes any bulk, but a lot of things to move the watery fluids right along! You could add something like brown rice if you want to thicken things up a bit :-) Don't be worried!
