the thing is it has lactic acid bacteria in it. lactic acid is what makes the cheese curdle. some specialty cheeses are made using molds, but I think bacteria and certain yeasts are more common.

kombucha, saurkraut, yogurt, and many other fermented foods contain lactic acid bactera as well.
