You can find kefir packets at a health food store or kefir grains. Each will work. You add this to milk ( i use organic goat milk)and let it sit on your counter for 24 hours covered with a cloth only. Then you refrigerate this and eat some daily. It will help with your dairy/chees cravings. You will be allowed grains but in whole form and only a few to start with.
No glutinous grains either on this diet.
