Good thing you don't have much of a taste for meat because it isn't healthy anyway. It actually acidifies your system making for a hospitable place for candida, parasites, inflammation and other problems.
After reading your post I think the perfect candida/healing diet for you would be Donna Gates's diet. Her book is called The Body Ecology Diet. Everything is in there that will get you on your way. You will have to give up dairy and fruit but you will get to try a new food called kefir which is very much like yogurt and is actually teaming with probiotics.
Also keep in mind that coffee drinking would need to be curtailed as well as soda pop, etc.
Drinking between 6 to 8 glasses of pure water a day should be fine. Mild exercise like rebounding on a mini trampoline would help immensly as well. Treat your self to relaxing, detoxifying Epsom Salt baths when ever you can.
Once you get settled into your diet some colon cleansing(colonics) and Liver Flushing will also benefit your condition and turn your biological terrain around to one that is condusive to good health.
