This enzyme type digests gluten/casein for you
There is an enzyme, that can be found in some digestive enzyme capsules, called DPP IV. It breaks down gluten and casein into smaller particles. For some people sensitive to gluten and casein, taking DPP IV can allow them to eat (moderatly) casein and gluten. Obviously, test it out with very small amounts of the casein/gluten on yourself before diving in to eating any larger amounts of these problem foods.
IMPORTANT - if you try it, open the capsule that has DPP IV, and swallow the contents before you start the meal. Reason: many companies use vegicaps, bowing to vegetarian requests, but vegicaps take 30 minutes to dissolve in the stomach, and that is much too late for the enzymes inside to do their work.
Apparently, DPP IV is not destroyed by stomach acid, and actually does its
DPP IV stands for " Dipeptidyl peptidase IV ", but the labels of most of the enzyme blends that have it simply use the abbreviation DPP IV.
