Any brand is OK provided it is unfiltered, organic and has the 'mother' in it.
You can take it any time as often as you like but if you take it before meals it is said to assist with digestion. The amount will depend on personal preference. I usually take 2 TBSP in a pint size glass of water with a dash of stevia but then I like it fairly strong. Taking it in apple juice is OK.
