Re: Andreas--Questions about Food Combining?
Dear Tony,
Most foods require specific enzymes to digest them. The enzymes become secreted once the taste buds on the tongue detect the types of foods eaten. When mixing vegetablews and grain together, it is going to be more difficult for the specific enzymes to attach themselves to the right foods. It is easier for the digestive process when the foods are eating in sequence, like first the raw foods, then cooked vegetables, then grains, etc. If you have a strong digestive system, you will have no major problems, but if it is weaker you will have gas or other indications of poor digestion. Years ago, I also used to eat things together, now I like don't like it mixed up anymore. I like to taste each food type separately, and I derive more pleasure from eating than before.
I do eat kitcharee sometimes, but mostly I seprate the two items. Rice and beans share a lot in common (both being semi-starch, semi-protein) and share simialr enzyme groups. So it OK to eat them together.
Avocado is a fruit and tends to ferment if eaten in the evening meal. Since it is low in sugar and high in fat, it has not the typical fruit-like properties. But bacterial content is high, nevertheless. It can become rancid very quickly if not processed properly (as happens during the night).
Blessings,
Andreas
