i used to think that! but i was told it was there for the high protein breakdown...an enzyme. the ginger is supposingly there for you to clear your mouth of fish taste?
hmmmm. california rolls eh? hmmm just doesn't make the cut for me...and makes me now think: if they are prepared on the same surface and same knife how do you know the critters or eggs don't spread?
