white tongue is a symptom

read http://beyondwellbeing.com/html/tongueform.htm

click on why do you ask under tongue coating I copied it just to be easier, there is more info on the tongue there though.

Tongue Coating Thickness Explained

No coating: Yin deficiency.

Yin deficiency is a lack of fluids and/or cooling mechanisms in your body. When there is a lack of fluids in your stomach specifically, there is no steam that arises to create the tongue's coating.

Thin coating: Normal, or external attack of wind.

Normal is what we label your condition when the tongue coating is thin and there are no other signs or symptoms of pathology. There's nothing wrong with you. Celebrate.

External attack of wind is a pathology that hasn't gotten in very deep. The common cold is a good example of this. Allergies and allergic rashes also fall into this category.

Thick coating: accumulation of dampness and phlegm.

Dampness and phlegm indicates a fluid metabolism problem giving rise to any one of a number of moist, oozing or sticky pathologies.

Geographic coating: Stomach Yin deficiency.

Stomach Yin is the fluids in your stomach and intestines. Should they become deficient, symptoms such as heartburn, constipation or chronic gnawing hunger can arise.
