When classifying foods as acid or alkaline are the multiple biochemical paths constituents of food might participate in taken into consideration? Or is it simple combustion analysis if the ash?

I suspect the answer is yes to the second question which begs the statement or question "is this truley representative of the manner in which nutrionla components are utilized the body in anabolic processes?
