Sure you can eat it. It doesn't have preservatives in it, that's good. Here in America a lot of the brands have preservatives in them. I am not sure why, because my favorite brand in Asia didn't have any preservatives in it. I did find one brand here that is organic, no preservatives.

The coconut cream is the coconut flesh that has grated, mixed with water, then squeezed and strained so that the solids weren't included. Coconut milk is the same thing, the difference being there is a higher fat content in the "cream" than the "milk." The liquid on the inside middle of the coconut is called "water". The cream/milk is what they use to make curries with. I am sure you already know that. So yes if you could make your own from fresh coconuts that would be the best but that stuff is still a pretty healthy thing to eat, in my opinion. I like to use it in smoothies, by the way :-)
