Kefir is fantastic stuff! People used to thrive on that stuff, it was a mainstay in the diets of the peasants and poorer people who couldn't afford much variety, and they lived healthy and long. :)
Go ahead and make your own cottage cheese if you have the time, more power to you! :)
Mixing flax and kefir, or flax and cottage cheese, is an excellent thing to do because it stops the flax from going rancid (which it quite quickly does) and the combination of oil and protein is the BEST energy in the world. Bruddig claims this also acts on the body like an anti-oxidant, which is great.
