Macadamia oil is a nut oil - so it will be polyunsaturated. These oils are healthy only if they are processed correctly (i.e. with minimum heat), and stored properly (i.e. no light/oxygen). Otherwise they are extremely *unhealthy*.

If it comes in a dark glass bottle and tells you to refrigerate upon opening, has guarantees about processing quality (i.e. no heat). then it is good.

Otherwise very bad.

Similarly sunflower oil is one of the unhealthiest things you can eat, because most of it is highly refined, processed at high temperatures, not stored properly etc.

Substitute with extra virgin olive oil in recipes.
