To make apples more appropriate for Vata, peel, slice and sautee in butter, cinamon and whatever sweetener you'd like to use. I allow myself brown Sugar now and again. ;) Add pecans or walnuts, raisins.............hot cereal....pancakes....

Any food can become more Dosha appropriate if you fix it to be that way. Raw Apples are naturally cold, light and astringent, all three things aggravate Vata but you have to eat them, they're soooo good for the body overall.

So you mitigate the Vata quality of them by making them warm instead of cold by cooking them, make them heavier by adding oil, and make them sweeter by adding sugar, and to offset the Sugar and oils adding cinamon to make them even hotter and easier to digest.
