This is about what I do. I do not measure anything
3/4 cup buckwheat flour
3 or 4 tbsp Flax Seed Meal
tsp baking powder (aluminum free)
dash salt
1 egg
2 tbsp refined coconut or pure olive oil (you could use unrefined but they would have a coconut flavor)
4 droppers liquid stevia
soymilk and water till it is the right consistency.
Put all dry ingredients in a bowl and mix, if you use coconut, cut into the dry mix add egg and a small amount of liquid and mix well because the coconut coagulates then keep adding liquid and then the stevia until it is right.
Cook over medium heattill golden. I hae been able to tolerate these very well even in the beginning.
I put homemade yogurt and cinnamon on mine. Warning: they are quite addictive. I also understand buckwheat is great if you have Type A Blood.
