Hi Michelle! I actually made my yogurt with unsweetened soy milk and powdered yogurt starter--lactose free. I added about a tablespoon of honey to the batch just so that the bacteria would have something to build on, but that's it. It turned out great--thick and creamy! I don't think that there are really any carbs in it at all, as they should have all been consumed in the fermentation process (I kept it in the yogurt maker for 24 hours--this ensures that the carbs are used up). I used soy milk because I have a dairy sensitivity, but fermenting regular cow's milk for 24 hours removes all the lactose from it as well, so it shouldn't feed yeast at all. :)
