I don't know what equipment you have, but my kids love smoothies and "blender spaghetti" made in my Vitamix. I haven't gotten them over to vegee noodles (made with a spiralizer) yet, but they both said they'd try it next time.
I have a 12 yr old son who is a meat and starch eater. He's my biggest challenge, because I don't want him to "rebel". So I try to make him appealing raw meals every day.
