Candida, Celiac, or other

My wife has been suffering from a mystery illness since last November. It started out during a stressful period in our lives with occasional acid reflux. She was given nexium which seemed to work for a while. Then in January the digestive problems got significanlty worse along with added stress. Headaches started followed by chest pains, anxiety, and panic attacks. Test after test found nothing until it was determined that her gallbladder was only working at 10%. By this time Depression had set in and she went ahead with gallbladder surgery. A number of antidepressants were given with no improvement. During the last part of the summer she developed lower back pain in the morning. She also had two positive ANA test. Niether test gave a number so a third test was ordered with was negative.

So after changing doctors again she found out that she has food intolerances to basically everything she nomrally eats. Most foods were rated at a 1 while wheat was a 2 and brewer's yeast and baker's yeast are a 3.

She was on a strict candida diet for a week when she got the food results and has incorporated that into her diet for an additional week. She has also been taking the usual supplements and natural antifungals for candida.

Today she still has the same symptoms which include fatigue, back pain upper and lower, tightness in chest, headaches that don't respond to OTC meds, depression, insamnia, and abdominal pains.

So the my questions are

If it is candida, should she have seen some improvement by this point?
Could Celiac really be the correct diagnosis or possibly something else?
