I have tried this when I first developed allergies and suspected candida. I did feel very good for some time, and had no more symptoms, but found it hard to keep the proportion of sweet foods low..
It is essential to keep the percentage of raw greens quite high, and to go easy on sweet fruits etc.If you are transitioning, go slowly and maybe still include some cooked low glycemic "non-grains like quinoa, buckwheat, millet" etc.
I also ate coconuts, but then they're easily available here (Singapore).
Check out www.rawfood.com or www.living-foods.com for their forum and search for candida related posts.
Dr. Gabriel Cousens in Arizona is an expert in treating candida and lots of other problems with raw diet. His book "Rainbow Green Live Food Cuisine" is quite intriguing, but the diets he puts people on for some 2 months are initially quite severe.
I believe that raw is excellent, but that not everyone is ready for it-physically and spiritually, and that you need to transition at your own pace.
