cinnamon is (mildly) anitfungal and amongst other things helps to control blood-sugar.

If I remember correctly anise is antifungal too (as well as being calminative). Vanilla should be fine.

If you want a straight Sugar substitute try xylitol - million times better than stevia, and is also antifungal and antimicrobial.

On the whole herbs are good things - we don't eat enough of them.
