I, for one, am so hung up on salads right now. My typical daily includes lettuce, chopped raw yellow squash, green onions, fresh minced garlic, fresh minced cilantro, lots of coarsely chopped raw mushrooms and thin sliced deli turkey. Sometimes I'll add about a half tablespoon of mixed cheese and 1 tbsp of a lite dressing. This makes for a full dinner for me and it's highly satisfying with the mix of textures, colors and flavors. I'm the type who loves the prep work so that adds to my satisfaction as well.
