are there ingredients other than maple syrup and malitol? is it organic?
i don't know much about malitol, so i'm not sure on how that rates on the toxic meter... i know big name brands use it, which is usually a bad sign, but i'm not sure.
i don't want to give you advice that might make you sick. again, my case of candida isn't all that severe. i can usually eat sweets without too much of a problem, other than some pesky rash and some sluggishness. but you do have a lot of flexibility with the maple syrup, so you could try to use 1/2 or 1/4 of what the booklet says, and you should be ok. it is a lot of Sugar to use it the way they say.
another option is stevia instead of the maple syrup. i know it can have a funky aftertaste, but it is completely herbal, very sweet and actually good for you. i bet it would work just great. hmm.... i may try that actually!
