Poached egg is gonna be ok for sure for the diet. I'm a diabetic also and for the last few months have researched a lot on low glycemic index foods and going on a diet of LGI foods has really helped my blood sugars stay down and I've been able to lose 15 pounds too. I'm a type 2 and I take some medications that make it harder for me to lose weight, but going on the LGI diet, I've lost weight without even trying. Egg, cheeses, meats, all those are low glycemic index. Oh, and my A1c came down too by 0.7 just from the diet.
