I am also vegan and would emphasize a diet that is varied. I wouldn't advise lowering fruits and root vegetables. I advise eating anything that is a plant as being perfect. I also wouldn't concern yourself with protein, it's a marketing gimick used by agriculture business to harp on benefits of meat (which is a lower quality protein anyway). Protein is the building block of all living things, like PLANTS, so if you're eating something natural, it has protein in it and you're probably getting plenty if you eat nuts, seeds and beans.
