30-50 % of my diet up until few years ago was bread and certainly it is still filling and emotionally comforting when/if I have it ... and, yes, I had it multi-grain and wholegrain, when I became more aware of the vitamins in the bran and importance of fiber. I had never thought until reading about gluten that smth insidious or somewhat undermining-success, as a brain fog, is due to gluten. Or that my always on a brink of inflammation sinuses and joints had to do anything with it.
Yes, I do have ravenous appetite without it but also have streaming energy and clear mind and sinuses! The ravenous appetite can be remedied upon by brown rice, potatoes, chickpeas, rice, millet, seeds (flax, chia, sesame, blackseeds) and other raw or cooked/sprouted starches (lentil makes good sprouts too!)
Possible strategy: Just go without gluten for a month and have as much as you want after. If nothing annoying happens, maybe you would be one of these exceptions that had fully adapted to it. Bloating, though, speaks otherwise. I believe, adaptation to gluten would be how fast your body repairs the burrows in your GIT from gluten, gliadin, glyphosate, and how long you can go until you start feeling it robbed pieces of your health and energy.
