Coffee filters work great for straining.

6-8 hrs of straining gives Greek Yogurt without the Milk powder pollution
12-24 hrs gives you a yogurt cheese.

The acid whey that comes off that is a mild tasty sour product that can be used for many things. Its a perfect marinade base or sourdough flavor..
